Instructions
In a bowl, mix the shredded chicken with cheese, chili powder, garlic powder, salt, and pepper until well combined.
Heat a non-stick skillet over medium heat. Place one low-carb tortilla in the skillet and sprinkle with a quarter of the shredded chicken and cheddar cheese
Top with another low-carb tortilla and cook until the bottom tortilla is golden and crispy, then carefully flip the quesadilla and cook the other side.
Repeat with the remaining tortillas and ingredients to make three more quesadillas.
In a small saucepan, combine the ingredients for the Keto Queso - cheddar cheese, heavy cream, chili powder, salt, and pepper. Cook over low heat, stirring constantly until the cheese is melted and the queso is smooth.
