Preheat your waffle maker according to the manufacturer’s instructions.
In a small bowl, whisk together the egg and shredded cheese.
If desired, add salt and pepper to taste.
Once the waffle maker is ready, lightly spray it with non-stick cooking spray.
Pour the egg and cheese mixture into the waffle maker, spreading it evenly.
Close the waffle maker and cook for about 3-4 minutes, or until the chaffle is golden brown and crispy.
Carefully remove the chaffle and let it cool slightly before serving.
