Keto Chicken Quesadilla

Ingredients

  • 1 pound boneless skinless chicken breasts, cooked and shredded skinless chicken breasts, cooked and shredded
  • 1/2 cup cheddar cheese shredded
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 4 low-carb tortillas look for ones made with almond flour or coconut flour
  • Ingredients for Keto Queso:
  • 1 cup cheddar cheese
  • 1/4 cup heavy cream
  • 14 tsp chili powder
  • Salt and pepper to taste

Instructions

  • In a bowl, mix the shredded chicken with cheese, chili powder, garlic powder, salt, and pepper until well combined.
  • Heat a non-stick skillet over medium heat. Place one low-carb tortilla in the skillet and sprinkle with a quarter of the shredded chicken and cheddar cheese
  • Top with another low-carb tortilla and cook until the bottom tortilla is golden and crispy, then carefully flip the quesadilla and cook the other side.
  • Repeat with the remaining tortillas and ingredients to make three more quesadillas.
  • In a small saucepan, combine the ingredients for the Keto Queso – cheddar cheese, heavy cream, chili powder, salt, and pepper. Cook over low heat, stirring constantly until the cheese is melted and the queso is smooth.
  • Serve the Keto Chicken Quesadillas hot, sliced into wedges, and topped with the Keto Queso.
